Cranberry Turkey Quesadillas
St. Stephen's Day Quesadilla: A Fresh Take on Festive Leftovers!
Ingredients
- 8 soft tortillas
- 8 tablespoons cranberry sauce
- 300g leftover cooked higher-welfare turkey
- 150g leftover cheese such as brie, camembert, asiago, mozzarella, or cheddar
- a few sprigs of fresh thyme, sage or parsley
Instructions
- Lay out 8 tortillas and spread one 1/2 of each of them with 2 tablespoons of cranberry sauce, then shred up and divide the turkey between them.
- Slice the cheese as thinly as you can or grate it, and spread out evenly over the turkey and scatter with chopped fresh herb leaves. Fold over the other half of the tortilla.
- Two at a time, dry fry the tortillas in a large frying pan over medium heat, or cook on a panini grill.
- Once the underside is crisp and golden (about 2 to 3 minutes), gently flip over and fry for a few minutes, then slide onto a board and cut into wedges.
